The honoured three

Three plates that say
what we cook.

Pick the shorthand: a thirty-year recipe (the Bento), the morning's craft (the Sushi), or the broth we'll never serve from a packet (the Ramen).

No. 01

Beef Teriyaki Bento

The signature. 28-day-matured fillet from a 2-year-old calf — driven up from a Yorkshire farm forty-five minutes away — flame-grilled and fanned over rice with miso soup, salad and pickle.

No. 02

Sushi & Sashimi Set

Hand-cut nigiri and rolled maki, prepared each morning. Plated on the blue-and-white china that has fed Leeds shoppers, lawyers, and lovers for twenty-five years.

No. 03

Special Ramen

Home-brewed miso broth simmered slow, ladled over noodles with charred chicken and a soft-yolk egg. The cold-Yorkshire-evening dish.

Three commitments

A kitchen with rules
we don't break.

1

Yorkshire-sourced

The fillet beef drives in from a farm forty-five minutes away — 2-year-old calves, 28-day-matured. The vegetables come from the wholesale market at dawn.

2

Home-brewed

Every sauce, every dressing, every miso-base soup is brewed in-house. No bottle on the shelf has anything in it we did not make.

3

Family-built

Simon and Rena Gueller hand-built the dining room twenty-five years ago — including the sycamore plank tables Simon spotted in a music shop, intended for cellos.

The room Simon built

Owner-operator

Tables made from cello wood.

"Back in the 90s, I was walking past a music shop that had these beautiful planks of sycamore ready to be crafted into a cello."

— Simon Gueller, founder

Simon and Rena Gueller opened the room in 2000 with eight tables, hand-built from the sycamore Simon spotted in that shop. Within a year they were seating a hundred. Within three weeks of opening, the Yorkshire Evening Post ran them on the front page.

Twenty-five years later, the same family still works the line — and they're planning the generational hand-over to the next.
